



Viticulture is a key pillar of our farm and has shaped life at Ebnicherhof for generations. Around 2.9 hectares of vineyards surround our farm, providing us with valuable grape material every year. The south-facing orientation and the varied hillside locations – from steep to almost flat – make the work diverse and challenging.
The altitude between 740 and 820 meters is ideal for white wines with exceptional freshness and elegance. Our main varieties are Müller Thurgau, Pinot Blanc, and Kerner. These are joined by Vernatsch and Pinot Noir, which enrich our red wine selection. For the future, we are expanding our range with Sauvignon Blanc and fungus-resistant grape varieties like Sauvitage and Divico. Initial results from our own cellar already show great potential.
The soils of our vineyards consist predominantly of porphyry, a volcanic rock. Depending on the location, they are sometimes sandy and stony, sometimes loamy and vigorous – ideal conditions for different grape varieties. Thus, Pinot Noir finds its home in the more robust, loamy soils, while Müller Thurgau develops its fresh lightness in the stonier locations.
The interplay of altitude, many hours of sunshine, and the open, airy location produces wines that impress with their freshness, fruitiness, and elegance. They not only possess charm for immediate enjoyment but also remarkable aging potential.
We consciously cultivate our vineyards close to nature. Permanent green cover and alternating cover crops promote humus formation and soil aeration. Our cows’ farm-produced manure also contributes to the vitality of the soil. In winter, our sheep take over the care of the vineyards – they strengthen the grass cover and leave behind valuable nutrients.
Trellis training allows us to precisely manage plant protection and ensure quick drying of the grapes. Hail nets protect the vines during ripening and secure the quality of the harvest. All these measures combine to create wines that not only reflect the character of our soils but also our appreciation for nature.
